Tiramisu Bombe (Exploded)

The Dessert of this Easter meal.



Food Concept

It was supposed to be a rehash of the chocolate frogs, but this time with a tiramisu instead, though some would have been made with typical dome moulds as backup if the frogs didn't work at all. Each one would have been plated as served individually.


Food Result

As you can see, the result didn't work at all. In the end I served it as sharing platter of ice-cream and coffee cake, hence the 'exploded'. But nobody minded, so it couldn't have been too bad.

Ingredients

Egg yolks

Mascarpone cheese

Sugar

Espresso

Sponge cake


How did it go?

While making the Tiramisu, the mixture collapsed. Instead of becoming thick and mousse-like, it stayed liquid. I tried to rescue it, and eventually just filled the moulds with the cake and mixture, and popped in the freezer, and hoped for the best. I have my suspicions on why the tiramisu didn't fluff properly: Either it was because I took a gap in the prep, due to an Alexa alarm. Or that I ended up using a reduced fat mascarpone, which may have changed the food chemistry. either way, i need more practice.
