The Salad of this Easter meal.

Food Concept
The original plan was to have an 'egg' made up of seasonal vegetable inside each other, like beetroot, artichoke, parsnip, radish, rocket, watercress etc. They would have been carved into rounds and placed inside each other for guests to cut open.
Food Result
In the end, it became artichoke and radish, that look like eggs in colour, on a bed of rocket that looked kind of like a nest. This was in part because I was running out of time on the day, and I hand to scale back a bit.
Ingredients
Artichoke harts (tinned)
Radishes (peeled)
Rocket leaves
How did it go?
As said I ran out of time, and the successive carvings of vegetable proved more difficult that anticipated. Even just peeling radishes is hard. Served it with a very quick lemon-oil dressing for those who wanted.
