This is the Soup (2nd) Course of this Harry Potter theme meal.
Food Lore:
The spawning season for the Merpeople can result in unfertilised eggs flowing into the fresh streams. These are collected as delicacy that can be simmered to release a flavoursome soup when popped open, evoking subtle flavours of the fresh fields and deep sea that mix in the magic lakes where the spawning takes place.
Menu Item:
Leek, Miso and White Wine clear soup, served as poppable balls.

Content:
Leek and Carrot Stock (homemade with garlic)
White miso paste
White wine
Calcium Lactate and Sodium Alginate (Reverse Spherification)
How it went:
The spheres were more delicate than expected and kept popping.
Bigger spheres were even more problematic
The initial leek stock could have been reduced for more flavour.
Improvements
Better clarity of soup
Needs bits in the soup (like sesame seeds or Wakame)
