Doing things differently:
I don't know if I will serve these next time round. They are easy to make and prevent a lot of faff at the end of a meal, but if the offering is supposed to be a demonstration of the chef's skill, then maybe i can afford to be more ambitious. And after a dessert of chocolate, a sweet sauce on sweet biscuits might be a bit harsh. With ginger the only flavour, it might seem a let down.
If i did make them again, i might add a bit more colour to the caramel to make it look really orange.
