Dragon Claw a l'orange

This is the Main (5th Course) of this Magical World Themed Meal


Food Lore:

Dragon stakes are generally available, but they require so much processing to remove the Flambile and other poisons from the meat. Dragon claws are special though, and toasting them fully scaled in the oven is enough to make them edible, all be it very meaty. The scales should remain slightly crunchy though it is so easy to cook them too soft. Orange provides a very much needed balance of fruity, sour and sweet that pairs so well with the spiced, gamey flavours.

Menu Item:

Pork and Chestnut sausage, carrot and parsnip scales, with an orange sauces.


Vegetarian option:

Edamame and Chestnut sausage, carrot and parsnip scales, with an orange sauces.

How did it go?:

  • The 'scales' dried out in the oven. I think simple, uncovered oven baking is not the way to go. Probably need cover in oven, or glaze before going into oven.

  • Not enough orange sauce to go around.

  • Not enough claws for people. Probably should make two claws per person.
